Kielbasa Pasta Casserole

Ingredients:
- Baked Ziti 16oz
- Kielbasa Sausage
- Vegetable Oil 2 tbsp
- Italian Stewed Tomatoes 3 14.5oz cans
- Tomato Sauce 3 8oz cans
- Dried Oregano
- Fresh Parsley
- Black Pepper
- Bread Crumbs, Italian flavor
- Shredded Cheese
Preheat oven to 350 degrees
Boil water in large pot, add salt to water
In medium skillet on medium high heat, add 2 tbsp vegetable oil, sausage cut up, oregano, parsley and pepper. Mix all ingredients together well.
Pour into a 9 x 13 baking dish, sprinkle with bread crumbs and top with shredded cheese
Cover with foil and bake for 30 minutes
Remove foil and bake for another 15 minutes, until top is golden brown
This recipe turned out great! I thought at first there was
going to be to much sauce. but after adding all the noodles
and meat it turned out to be just the right amount. When
putting this dish together make two layers of bread crumbs
and shredded cheese, on layer in the middle and on top.
This way you get cheese throughout the dish. Once you
have finished assembling everything put under the broiler
for approximately 5 minutes until it turns golden brown on
top.
Fish Taco's
Ingredients:
- Tilapia Fillets
- Flour or Corn Tortilla Shells
- Cabbage
- Guacamole
- Lemon 1
- Mayonnaise 2 tsp
- Corn Meal 4 tbps
- Italian Cheese and Herb Bread Crumbs 1/4 tsp
- Black Pepper 1/4 tsp
- Garlic and Parsley spice 1/4 tsp
- Salt 1/4 tsp
- Olive Oil 2 tbsp
Directions:
On a plate mix together corn meal, black pepper, garlic and parsley seasoning, salt and Italian cheese and herb bread crumbs. Mix all together.
Cut your Tilapia fillets in half to make strips. Lightly roll your fillets in your corn meal mixture, don't coat them to heavy.
Heat up a skillet with olive oil. Once hot lay your fillets in your hot skillet, be careful as the oil may pop a little. While your fillets are browning you can make your topping.
Topping:
Cut up your cabbage into shredded pieces, take your lemon and roll it on your counter to get the juices flowing. Cut in half and squeeze juice into your bowl of cabbage. Add mayonnaise and mix all together.
Make your guacamole, either homemade or store bought, whichever you prefer.
Once your fillets are golden brown on each side take off the burner and lay to the side.
Take your flour or corn tortillas and warm them either on your burner or microwave. If they are a little dry sprinkle a little water on them.

Crispy Chicken
Ingredients:
- Skinless boneless breast chicken
- Corn meal 1.5 cups
- Italian bread crumbs 1.5 cups
- Black pepper 2 tsp
- Garlic and Parsley seasoning 2 tsp
- Salt 2 tsp
- Eggs 2
- Milk 2 tsp
Directions:
Warm up your oven to 350 degrees. While oven is preheating set out one bowl and a plate. Make your breading mix on the plate, Corn meal, bread crumbs, pepper, garlic and parsley, and salt. Mix them well.
In your bowl mix two eggs and your milk together. This will be your glue for your chicken.
Dip your chicken into the egg batter and roll into your corn meal mix to give it a nice coating. Place each piece of chicken into a baking dish. Bake for 20 minutes and then flip them on the other side. Continue baking for another 20-30 minutes depending on how hot your oven gets. Look for a crispy golden brown crust. Serve with whatever side you choose, I served mine with scalloped potatoes.
